Describes a savory, meaty taste; often associated with monosodium glutamate (MSG) and mushrooms.

univalve

A single-shelled, single-muscle mollusk such as abalone and sea urchin.

unsaturated fat

A fat molecule with at least one available bonding site not filled with a hydrogen atom. May be monounsaturated or polyunsaturated. Tends to be liquid at room temperature. Primarily of vegetable origin.
