kasha

Buckwheat groats that have been hulled, crushed, and roasted; usually prepared by boiling.

knead

To work or mix a dough by hand to soften it to working consistency, or to stretch yeasted doughs to expand their gluten.

kosher

Prepared in accordance with Jewish dietary laws.

kosher salt

Pure, refined salt, also known as coarse salt or pickling salt. Used for pickling because it does not contain magnesium carbonate and thus does not cloud brine solutions. Also used to kosher meats and poultry.
